K is for Key Lime!

So you guessed it....K is for Key Lime! I will confess that I this is my second time attempting these cupcakes, and they still are not perfected like some of the others. But I wanted to share them with you anyway. They taste good, but the texture isn't to my liking...and if you know me, you know I am total Type A perfectionist, so I will get these right!

The frosting is the best part of these ones. It has cream cheese, butter, powdered sugar....and lime gelatin. It has a very robust lime flavor. So summery! I will continue trying different recipes until I get the right Key Lime one....that is part of being a baker, isn't it?

Hmmm.....now I wonder what L will be? Any thoughts?

I've Missed You!

Hi Everyone! I am so sorry for the delay in my blogposts this week......life has been crazy! Last weekend I had 3 cupcake orders, and we also took a trip to Las Vegas.

It was our dear friend Jon's Fiesta Birthday Party over the weekend, so we did Red Velvet Fiesta cupcakes (below). My husband & I used fondant for the fiesta shapes and they turned out great!

I also had a Vanilla/Chocolate Chip order for my niece & nephew! My niece wouldn't let us eat them without singing "Happy Birthday" even though it wasn't anyone's birthday (She's 2....so....we sang!). They were so much fun to make!

I also had a German Chocolate order, but the pictures did not turn out good, so I can't share them with you :(.

Don't forget to join us at Cupcake Camp OC this Sunday at the Atrium Hotel in Irvine! My cupcakes will be available to eat from 430-545 and all they ask you for is a donation at the door. Then you can eat lots and lots of cupcakes....not just from me, but from many talented bakers. Look for our "Polka Dots Cupcakery" banner and table :)

Finally! A New Post!

Hi Everyone! I am sorry it has been so long since I have posted pictures. We had a busy weekend in Fresno, and then I had 2 orders that I have been working on. Anyway, I will deliver K to you tomorrow, I promise!

Below are pictures of the apple cinnamon cupcakes we took to Fresno, and the mini red velvet cupcakes for an order I had on Monday. They have fondant letters on top.

Heading out of town!

I just wanted to let everyone know that K will be here next week, we are headed out of town for the weekend. Any guesses as to what I might make for K?

Also, big news! We will be participating in "Cupcake Camp OC" on Sunday, August 1st. Its a great charity event with lots of cupcakes and cupcakes lovers! Woo-hoo, our first event!! I am so thrilled to be able to get our name out there and network with other bakers. Not sure how I am going to make 150+ cupcakes, but it can and will be done! J is for Jubilee--Cherries Jubilee Cupcakes with Vanilla Brandy Buttercream

Tonight's cupcake is Cherries Jubilee with Vanilla Brandy Buttercream Frosting. Cherries Jubilee is a classic desert with cherries, brandy and fire (that's my understanding!), so I did a spin on that for tonight's cupcakes. The cupcake is a cherry cupcake made with cherry puree, and the vanilla frosting has just a hint of Brandy. So GOOD!

The Cherry flavor in the cupcake is very subtle, so I may try to find cherry extract to add next time. But the texture is great, and the cherry is definitely there. The frosting is killer! For those of you who know me, you know I don't like alcohol, but I promise the Brandy really makes this desert come together. A cherry cupcake wouldn't be complete either without a cherry on top!

The reason I went with Jubilee for J is also for my mom Jill. Her desert of choice was anything cherry, and these cupcakes will always remind me of her because I know she would have loved them!

New Happenings :)

Happy Monday All! I know you are expecting the cupcake for J, and I will get to that later today, but I wanted to share with everyone about our very eventful weekend!

I had 2 cupcakes orders! One on Friday for Earl Gray and Chocolate Hazelnut; and one on Sunday for Coconut. I am thrilled to be able to make cupcakes for other people to enjoy. Thank you to my aunt for the referrals!


This weekend we also launched our website for our cupcake business, "Polka Dots Cupcakery". My husband did the entire website, I knew he was talented, but this blew me away. He did an amazing job and was very patient with me changing my mind about things :). Please check it out and let us know what you think!

Ive been so busy with cupcakes that Ive decided if this business ever gets big enough to where I need to hire help, the first person will be a dishwasher! I swear if I had a dollar for every time I wash that dang mixer bowl, I'd be rich!

I is for Ice Cream Cone Cupcakes!

Hi everyone! It has been quite a few days since my last post. I have been busy making cupcakes for events (very exciting!). Anyway, today's cupcake is a vanilla cupcake in an Ice Cream Cone! Rather than using a paper liner, I used a flat-bottomed ice cream cone to hold the cake. Then I made vanilla buttercream frosting, colored it pink, and piped it on to look like soft serve. How fun are these! And what ice cream cone would be complete without some sprinkles?!? Wouldn't these be so cute at a kid's birthday party?

Happy 4th of July!!

Happy 4th of July everyone! I wanted to share our very patriotic Coconut-Cream Cheese cupcakes with you all.  We are taking these to a BBQ with our best friends today. Isn't 4th of July just the best?! I hope you all enjoy your holiday with your family and friends. Let the summer fun begin!

H is for Hazelnut--Chocolate Hazelnut Cupcakes with Chocolate Hazelnut Buttercream

Today's cupcake is all about Hazelnut's and their best friend chocolate. Can I just say that whoever invented Nutella is a genius?! Chocolate and hazelnut just compliment each other fabulously. Both the cupcakes and the buttercream frosting have Nutella in them. Of all of the nuts we use in baking, I have to say hazelnuts are my favorite.

These cupcakes remind me of Donatella Gelato! They are almost brownie-like, except lighter. I finished them off with chopped hazelnuts. Yum-Yum!

I am so thrilled to say that I have received my first official cupcake order! I am so excited. Brett is almost finished with my website and we are in the process of applying for our home business license. I am so touched and thankful for everyone's support!

G is for German Chocolate :)

Today's cupcake is German Chocolate. I am in love with these cupcakes for so many reasons.

1) They look pretty!
2) I used cake flour this time, the cake is so fluffy, its amazing!
3) The frosting is the perfect compliment to the cake.
4) German Chocolate is my favorite! Always has been.

These were so worth the work, and although I love all of my cupcakes thus far....If I had to pick a favorite, it might just be this one! Thank you Martha Stewart for the wonderful recipe.
